Joy of Cooking Custard



2 cups milk                      2-3 beaten whole eggs
1/4 -1/2 c. sugar               1/2 -1 tsp. vanilla
1/8 tsp. salt                       1/2 tsp. nutmeg

Whisk together 1st 5 ingredients and pour into 6 one cup
oven safe ramekins or pyrex custard cups.  Sprinkle
nutmeg over top of each.   Place custard cups into a
9 x 13" pyrex pan to which you have added water
to a depth of one inch or so. Bake in preheated 300-325
degree oven for around one hour or until knife inserted
into custard comes out clean.  Cool on cooling rack.
